Consumption of this would definitely increase weight in the person and the glycaemic index of white rice is 89% which means to say that the sugar levels are peaked after consumption of polished rice. It is not what we commonly prepare at home but it can be prepared on a regular basis due to its health benefits. Amla is rich in Vitamin C, calcium and iron. It has amla rasa (Sour taste) and Madhura vipaka (sweet after digestion). It pacifies vata, pitta and kapha dosha. It is said to be anti-inflammatory and is a natural antioxidant. It is good for respiratory disorders, heart disorders, skin, eyes, hair and nails. It is a very good rejuvenator and increases immunity and youthfulness of the person. It is the best rasayana herbs known to Ayurveda.
Cooked Rice – 2 Cups
Oil – 2 tablespoon
Mustard Seeds – 2 tsp
Urad Dal – 2 tsp
Curry Leaves – 20 leaves
Turmeric – ¼ tsp
Roasted Peanuts – 2 tablespoons
Salt – to taste
Fenugreek Powder – 1 tsp (Dry roast Fenugreek seeds and powder it)
Amla (Indian Gooseberry) – 10
Dry Red Chilly – 4
Step No. 1
Wash amla and cut into 2 pieces and deseed them
Step No. 2
Grind amla with dry chilly until it forms a paste without using water.
Step No. 3
Take a heavy bottomed pan and heat the oil – add mustard wait till it crackles and then add urad dal and roast until light brown.
Step No. 4
Add curry leaves and turmeric powder and sauté for a few seconds.
Step No. 5
Add to it peanuts and roast it for a few minutes.

Add grinded amla dry chilly mixture to it and stir all the ingredients well in a low flame and wait till the rawness of amla goes away.

Finally add the fenugreek powder, rice and salt and combine all the ingredients well.
Step No. 8
Cover the pan and simmer on low heat for a couple of minutes. Turn off the heat and allow the mixture to rest for about 2 minutes before serving.

Delicious and hot amla rice is ready to serve; it is a perfect lunch box dish and also can be prepared for special occasions.
